LYNHER DAIRIES
Award-winning artisan cheesemaker Lynher Dairies, based in Cornwall,
makes Yarg by hand, using milk from its own cows topped up with milk
from ten local herds. Yarg is a deliciously tangy, semi-hard cheese
that is creamy under the rind and slightly crumbly in the core. Each
individual truckle is wrapped either in edible nettle leaves or in
wild garlic leaves, each of which gives a subtle flavour to the cheese.
